I’ve been reading the Clean & Lean Diet book by James Duigan, Elle MacPherson’s trainer, because let’s face it who doesn’t want to be long and lean like Elle. Actually, I was drawn to this book because of the title. I’m not a big fan of diets- they don’t work. This book should’ve been titled Clean & Lean Living because it’s all about a lifestyle: eating fresh foods in the most natural state, getting your body on track to deal effectively with toxins, not spending hours in a gym or looking anorexic. It’s a process. According to Duigan, “lean” means a body that’s “lovely-looking…that’s just the right side of athletic…a good mix of curvy, slim, and healthy.” This is exactly what I envisioned when entitling my blog Lean Girls Club.

I’ll be sharing tips and what I’ve learned in coming weeks, but today I want to share a great recipe in Duigan’s book. make it this weekend and enjoy!

Roasted Peaches With Honey and Yogurt

Ingredients:

4 ripe peaches, halved and pitted
juice of 2 oranges
1 tablespoon Manuka honey
1/2 cup Greek yogurt
1 teaspoon vanilla extract
1/3 cup chopped pistachios, to garnish

1. Preheat the oven to 400 degrees F.

2. Set the peach halves cut side up in a roasting pan. Pour the orange juice around them, and then drizzle the cut surfaces with the honey. Roast for 10-15 minutes.
3. Meanwhile, combine the yogurt with the vanilla.greek yogurt vanilla extractgreek yogurt vanilla extract
4. Place the peach halves in individual bowls, spoon on some yogurt, and scatter with the pistachios.
