RECIPE: BERRY SUMMER SALAD
One of my favorite things about summer is the endless supply of ripe berries that are in season this month. I could have berries all day, every day. I love them even more when they’re paired with something savory, like goat cheese. Here is my brother’s very simple berry summer salad. It’s not only quick and easy, but it’s also refreshing and requires no heat which is perfect for a New Yorker like me to abhors the stove in the summer.
BERRY SUMMER SALAD

6 cups Baby Spinach
1 pint blueberries
1 pint raspberries
1 cup raw, unsalted walnuts
4 oz crumbled goat cheese
olive oil and lemon juice to taste
1. Wash all produce and dry.
2. Toss baby spinach, blueberries, raspberries, and walnuts.
3. Drizzle olive oil and lemon juice to taste.
4. Crumble goat cheese on top to garnish.
Optional: add a grilled protein of choice (chicken, salmon, turkey).
