Breakfast Stuffed Peppers


I was tired of plain scrambled eggs so I mixed things up a bit and stuffed a pepper. What a great way to start the morning with protein and filling veggies. And lots of color too.

Breakfast Stuffed Peppers
-3 eggs (or egg whites)
-1 bell pepper
-1 cup spinach
-1 clove minced garlic or chopped onions (optional)

1. Grill pepper for 1 minute on each “side” evenly then bake pepper for 10 minutes in over at 350 degrees.
2. In pan at medium heat, sautee spinach light with olive oil and minced garlic (1 minute). I personally love garlic with my eggs. It’s the way my boyfriend makes it for me 🙂 Garlic is good for you.
3. Whisk eggs and scramble within the first minute the spinach is in the pan.
4. Stuff pepper with eggs.

Optional: top with salt, pepper, a little bit of cheese, or salsa.
