Coconut and Date nut protein balls recipe

siggi’s yogurt

December 22, 2014

Day 11 of 12 of My Favorite Things. I recently was invited to a siggi’s yogurt tasting and workout – of course I said yes! siggi’s is one of two brands of yogurt that I will eat. Why? siggi’s Icelandic style yogurt, or skyr, is just as thick as Greek yogurt (if not thicker), extremely creamy, high in protein, and is low in sugar. If you’re a person who thinks plain yogurt tastes like sour cream, then siggi’s is for you. You can have flavored yogurt and be healthy because siggi’s flavored yogurt has half the sugar of other flavored yogurts. Today I’m giving away a month’s supply of siggi’s yogurt, so you can fuel your body right in 2015. You can even recreate these coconut and date protein balls that I tried at the siege’s yogurt tasting. Siggi’s Coconut and Date Nut Protein Balls Ingredients: 1 cup Medjool Dates,…

How To Make Peppermint Ice box cake

December 10, 2014

12 Days of Favorite Things will be back tomorrow. Today I’ve partnered with In The Raw® to bring you a light and refreshing treat. If you thought my obsession with pumpkin was bad as evidenced from my posts about my healthy pumpkin spice latte and pumpkin mousse parfait, you don’t know the half of it. I love winter. I love racing in the cold, sipping hot cocoa to defrost (even better if it’s peppermint hot chocolate), and the jingle bells tied to my running shoes. But my favorite thing about winter? Peppermint. Try my peppermint ice box cake. It’s a light and not overloaded with sugar like other holiday treats. Take it to a holiday party and stay merry, bright, and refreshed this holiday season.

Recipe: Lean and Healthy Pumpkin Mousse Parfait

November 18, 2014

Thanksgiving is my favorite time of year. There’s no pressure to buy any fancy gifts and the focus is on food and family. I always look forward to going home and cooking for my family. Now that we have two and a half generations of Korean-Americans in the family, we celebrate the holiday with a traditional American Thanksgiving meal. However, the one thing the Kims don’t like is pumpkin pie. Blasphemy, I know. I’m determined to win them over to the pumpkin lovers club this year with this easy lean and healthy pumpkin mousse parfait. LEAN AND HEALTHY PUMPKIN MOUSSE PARFAIT Ingredients: 1 cup plain non-fat Greek yogurt 1/2 cup pumpkin puree 2 tbsp sugar-free instant butterscotch dry pudding mix 1/2 tsp pumpkin pie spice 1/2 tsp ground cinnamon 4 tsp Stevia In The Raw® (I like it because it’s a natural sweetener) 1 cup granola of choice Optional toppings:…

Healthy Pumpkin Spice Latte

October 22, 2014

When I think of Fall, the three things come to mind that bring me joy are Halloween (last year I went as Miley Cyrus with the foam finger), the NYC Marathon, and pumpkin spice lattes. Over the years I’ve stopped purchasing big-brand pumpkin spice lattes because I hate the intense amount of sugar and chemically taste. Instead, I make my own at home now. Here’s how to make my healthier pumpkin spice latte at home with a third of the calories. Ingredients: ½ cup milk of choice 2 tbsp pumpkin puree 2 tsp pumpkin pie spice ½ tsp organic vanilla 2 tsp Stevia In The Raw® 1 cup brewed coffee dash of cinnamon Directions: 1. In a sauce pan, mix milk and pumpkin puree on medium to low heat. Stir and heat mixtures for one minute. 2. Remove from heat and add in vanilla, spices, and Stevie In The Raw®….
